A Chef’s Journey: From Fine Dining to Mindful, Health-Boosting Cuisine

With 29 years of experience as a chef, I have had the honor of working with prestigious establishments and high-profile events, including Fortnum & Mason and the Oxo Tower Restaurant, affiliated with Harvey Nichols. I’ve also worked with renowned restaurants such as Fino and Quo Vadis, owned by the Hart Brothers. Beyond fine dining, I’ve had the privilege of catering for Cirque du Soleil, the Queen’s birthday celebration with Fortnum & Mason, and high-profile musicians like Eric Clapton, Bon Jovi, Beyoncé, and Pink. My career has also taken me backstage at major festivals, including Glastonbury, Leeds, Reading, Download, Latitude, Corona Festival, and the ATP Tennis tournaments.
Despite my extensive experience, my passion for cooking has never wavered. Watching close friends and family struggle with health issues, coupled with the impact of COVID-19, has driven me to explore a deeper connection between food and well-being. My dedication to creating innovative dishes that merge food chemistry with mindful, health-boosting ingredients has only grown stronger.
I firmly believe that CBD should be seamlessly integrated into both savory and sweet dishes. The ingredients we choose are just as important as the flavors we create, and my goal is to showcase the health benefits of mindful eating in every dish. With a little thought and intention, I believe I can make a small yet meaningful impact on how we approach food.
While CBD has traditionally been used in sweet treats, its presence in savory dishes is growing, and I’m excited to explore its potential in everyday meals. I also enjoy researching how different vegetables and herbs can enhance the effects of CBD, optimizing its interaction with the body for greater benefits. My mission is to raise awareness about what’s available, how it works, and why it matters—helping people make more informed choices about their well-being.
